Homemade Ricotta Gnocchi
Light, pillowy, and oh-so-satisfying — this simple gnocchi recipe comes together in minutes and tastes like an Italian Sunday dinner any day of the week!
Ingredients
1 cup all-purpose flour
1 cup ricotta cheese
1 egg
Kosher salt, to taste
Black pepper, to taste
2 oz Pecorino Romano cheese (about 1 cup), very finely grated — plus extra for serving
Directions
In a mixing bowl, combine the flour, ricotta, egg, salt, and Pecorino Romano. Mix until a soft dough forms.
Divide the dough into four equal pieces.
Roll each piece into a long rope (or “snake”) about ½ inch thick.
Cut into ¼-inch pieces and lightly pinch each one to give that classic gnocchi shape.
Bring a large pot of salted water to a rolling boil and drop in the gnocchi.
When they float to the top, they’re done! (This takes just a minute or two.)
Scoop them out and toss immediately in your favorite sauce — marinara, pesto, or browned butter with sage.
Finish with a sprinkle of Pecorino Romano and enjoy every bite!
