Homemade Ricotta Gnocchi

Light, pillowy, and oh-so-satisfying — this simple gnocchi recipe comes together in minutes and tastes like an Italian Sunday dinner any day of the week!

Ingredients

  • 1 cup all-purpose flour

  • 1 cup ricotta cheese

  • 1 egg

  • Kosher salt, to taste

  • Black pepper, to taste

  • 2 oz Pecorino Romano cheese (about 1 cup), very finely grated — plus extra for serving

Directions

  1. In a mixing bowl, combine the flour, ricotta, egg, salt, and Pecorino Romano. Mix until a soft dough forms.

  2. Divide the dough into four equal pieces.

  3. Roll each piece into a long rope (or “snake”) about ½ inch thick.

  4. Cut into ¼-inch pieces and lightly pinch each one to give that classic gnocchi shape.

  5. Bring a large pot of salted water to a rolling boil and drop in the gnocchi.

  6. When they float to the top, they’re done! (This takes just a minute or two.)

  7. Scoop them out and toss immediately in your favorite sauce — marinara, pesto, or browned butter with sage.

  8. Finish with a sprinkle of Pecorino Romano and enjoy every bite!
